descriptionA measure to estimate an individual's daily average intake of fiber over the last 30 days as measured in grams. The Institutes of Medicine (IOM) set an Adequate Intake (AI) for Total Fiber in foods at 38 and 25 grams/day for young men and women respectively, based on the intake level observed to protect against coronary heart disease. Fiber decreases the absorption of fatty acids and cholesterol from the gut and may also reduce postprandial blood glucose concentrations and potentially have a beneficial effect on insulin sensitivity.
